Sultana and Oat Cookies
125g softened butter
½ cup of caster sugar
½ teaspoon vanilla extract
1 egg
2 cups of plain flour
1 tsp baking powder
¾ cups rolled oats
½ cup sultanas
Method:
- Preheat oven to 180 degrees
- Beat butter, sugar and vanilla in mix master
- Add egg, flour, milk and baking powder to mix
- Add sultanas, rolled oats and mix through gently
- Roll into balls and bake on baking tray
- Bake for 15-18 mins until golden.
Blueberry Muffins
1 ½ cups milk
1 egg
2 teaspoons vanilla extract
2 cups self-rising flour
2 cups of plain flour
¼ teaspoon bicarbonate of soda
1/3 cup caster sugar
25 grams melted butter
½ to 1 cup fresh blueberries
Method:
- Mix dry ingredients in a bowl
- In a separate bowl lightly whisk egg and milk, vanilla and melted butter, stir
- Pour over dry ingredients and mix. Avoid over mixing as pancakes will be tough
- Gently stir through blueberries
- Allow to sit in fridge for at least half n hour if possible
- Heat pan or skillet with canola spray or butter on medium heat
- Add a tablespoon of mixture to the pan (for large pancakes use a quarter or third measuring cup)
- Turn when bubbles around the edges form
- Allow to cool on the other side
- Serve with maple syrup, butter or ham and cream
